I love pickles. Particularly this is.
It's special pleasure to us because Yuzu is a seasonal food and has very nice smell in winter season.
Also radish is so sweet and juicy now.
I cut the radish and rub with salt and squeeze them. Then it is pickled with salt, vinegar, sugar, kombu and Yuzu peel and squeezed juice.
It is like a salad. Radish helps digestion and has very refreshing taste. It is good for meat or fish dishes.
Please try it if you could find Yuzu.
